Take 2 cup Montery Jack Cheese, divided
Take 1/2 tsp Kosher Salt

Preheat oven to 375°F. Spray a 13 x 9 x 2 glass dish with non stick cooking spray.
Saute sausage in medium nonstick skillet on medium heat until the sausage is browned and cooked through, making sure to break up large pieces.
Add shallots and garlic. Saute for 4 minutes.
Add 2 tbl. chopped parsley, stir for 1 minute.
Spread sausage mixture into prepared dish.
In a large bowl, combine eggs, egg yolks, half and half, whipping cream and salt. Whisk until well blended.
Add green chilies and 1 1/2 cups cheese to the egg mixture. Stir until well combined.
Pour egg mixture over sausage mixture in the baking dish.
Sprinkle remaing cheese and parsley over the top.
Bake until top is golden and the center is set, whena knife inserted in the center comees out clean, about 30 to 35 minutes.
