  2. Add a large splash of veg oil to a large pan on medium-high heat. Add the mushrooms and fry until they start to brown, about 5 minutes. Remove the mushrooms to a plate.
  3. Add the shallot and garlic to the same pan. Refresh the oil if you have to. Fry for about 2 or 3 minutes until fragrant, then add the chicken wings and marinade. Give everything a stir. Add the chicken stock and return the mushrooms. Cover with a lid. Turn the heat down to medium-low and let simmer for 20 to 25 minutes. If there's still a lot of liquid or if the sauce is really runny, turn the heat up and simmer uncovered to reduce. Serve with freshly steamed rice.
