The ingredients needed to make Aloo Masala Dosa:
  1. Make ready For Dosa batter
  2. Get 3 cups parboiled dosa rice
  3. Make ready 1 cup whole white urad dal
  4. Prepare 1 tsp fenugreek seeds
  5. Take For aloo masala stuffing:
  6. Take 4 boiled potatoes
  7. Make ready 2 tbsp oil
  8. Take 1 tsp urad dal
  9. Prepare 1 tsp mustard seeds
  10. Prepare 1/2 tsp cummin seeds
  11. Prepare 1 pinch asafoetida (hing)
  12. Prepare leaves Few curry
  13. Make ready 1/2 tsp tumeric powder
  14. Take 11/2 tbsp spicy green chillies ginger paste
  15. Make ready Salt to taste
  16. Take Butter or ghee to roast dosa
  17. Get For coconut chutney:
  18. Get 1 cup coconut pieces
  19. Get 1/2 cup corainder leaves
  20. Get 1/4 cup roasted gram
  21. Prepare 1-2 green chillies
  22. Make ready 1 ginger
  23. Prepare leaves Few curry
  24. Make ready Salt to taste
  25. Get Cold milk or fresh curd as required
Steps to make Aloo Masala Dosa:
  1. Wash parboiled rice and urad dal + fenugreek seeds 4-5 times in water and soak in clean water separately overnight or for 6 hours.
  2. Discard soaked water. First grind urad dal+ fenugreek seeds in wet grinder. Then add soaked parboiled rice and grind again to make smooth dosa batter. Cover & ferment for 8 hours.
  3. To make aloo masala stuffing.. peel and finely chopped boiled potatoes. In Kadhai add heat oil. Add urad dal saute till pinkish in colour. Add mustard seeds and cummin seeds as splutter add asafoetida. Add curry leaves, tumeric powder. Add green chillies ginger paste, chopped boiled potato pieces. Add salt and mix well. Aloo Masala Stuffing ready.
  4. Add salt to taste & 1 tsp sugar in fermented batter. Heat Dosa tawa. Grease with 1 tsp oil. Wipe with tissue paper after 1 minute.
  5. Pour laddleful of dosa batter on dosa griddle in center. Spread thinly in circular motion toward edge of tawa to make dosa. Drizzle with melted butter or ghee. Roast till lower side is crispy golden. Put 2-3 tbsp of aloo mixture in center or spread on half side of prepared dosa. Fold it. Similarly prepare all.
  6. To prepare coconut chutney: Grind green chillies ginger and roasted gram in mixer jar. Add chopped coconut, corainder leaves, curry leaves,salt, churn again. Add cold milk or fresh curd and grind again to make chutney.
  7. Serve/ Relish Delicious Hot Aloo Masala Dosa with coconut chutney.
