Instructions to make Dosa:
  1. Wash the rice and urad dal 3 to 4 times or until you see clear water. - Add methi seeds and water and soak for 6 hours minimum.
  2. After 6 hours, grind the rice dal methi together in a mixer into a fine paste. Don't get tempted to add extra water.
  3. Keep the batter covered on a dry warm place like oven or on your kitchen counter for at least 6 hours or overnight (that's the best)
  4. Next day morning you will see that your batter has risen perfectly and has become very light in weight. Also you can smell that fermented aroma from the batter. That's the exact sign of perfect fermentation.
  5. Now stem idlis using your idli steamer or dosas on your iron tawa.
  6. I usually start by steaming idlis and simultaneously make dosas on the other side as my kids love both of them.
  7. Serve hot with sambhar and coconut chutney.
  8. For the chutney, grind together coconut, coriander, chillies and dalia, salt. - Add little water at a time and grind again to get a fine consistency. - Adjust water accordingly. - You can also add tadka to the chutney.
