To begin with this recipe, we have to first prepare a few ingredients. You can have brown rice masala dosa using 20 ingredients and 5 steps. Here is how you can achieve that.
The ingredients needed to make Brown Rice Masala Dosa:
Get For Dosa batter
Get 2 cups Brown rice
Get 3/4 cup Urad dal
Make ready 2 tbsp Chana dal
Take 1/2 tsp Methi or Fenugreek seeds
Take 1/2 tsp Salt
Make ready as required Ghee or oil for cooking
Take For Stuffing Masala
Prepare 1/2 cup Onions roughly chopped
Take 1/2 tsp Turmeric powder
Prepare 1/2 tsp Red chilli powder
Take 1/2 tsp Amchoor powder
Prepare as required fresh coriander leaves few
Take as needed Curry patta and mustard seeds for tempering
Take As needed Finely chopped green chillies
Prepare as per taste Salt
Make ready 1 tbsp Chana dal
Make ready 1 red chilli whole
Prepare 2 cups Boiled potatoes roughly mashed
Get as required Oil for cooking
Steps to make Brown Rice Masala Dosa:
Wash and soak rice for 4 hrs with enough water. Mix both the dals and Fenugreek seeds and soak that too with enough water. Grind the seived rice to a fine paste by adding approximately 1.5 cups of water. Add little water first, do not add all the water together Similarly grind the seived daals too. Now mix both rice and dals,add salt. Keep it covered in a deep vessel for fermenting at least for 8 hrs.
Now prepare the masala.Add oil in a kadai,add the Curry patta, musard seeds, as they split add chopped onions, red chillies,green chillies, turmeric, amchoor powder,salt,add little water so that all the masalas are well cooked. Add in the mashed potatoes, mix nicely check the seasoning add fresh coriander leaves. Keep aside.
Now for dosa,I used a dosa griddle. If you have great else use a non-stick one. The most important thing to remember is to heat the griddle nicely. And then keep the flame low to medium sprinkle some oil spread it and wipe it. Now check the batter if it's too thick add little water so that you are able to spread it. These Dosas are a little stickier as compared to the regular dosas. They take a little more time to cook and leave the sides of griddle. Sprinkle oil & don't be in hurry.
As it leaves the sides, in the center add the masala and wrap half.Usualy dosa are cooked on one side only. So make sure to spread the batter as thin as you can not like chilla which are a little thicker. Serve immediately with your favourite chutney and sambhar!!
Notes - 1. I found these Dosas to be crisper than the regular white ones, so I didn't use onion to rub on the griddle before spreading the dosa batter. - 2. After each dosa is cooked, sprinkle some water on the griddle and wipe it,then spread the dosa batter.This helps the dosas to come out clean - 3. The flame of the gas should be medium and too low or too high. Sprinkle oil to give a shine to your healthy version of Dosas!!
