- In a food processor blend potato, ginger garlic paste and duck mince, Mix all ingredients except for egg and bread crumbs, throughly
- Make medium size patties, dip in egg bater, dust in bread crumbs, place flat pan on medium heat, when hot sprinkle oil, place patties on a pan, cook until golden brown on all sides, serve with dipping sauce
- To make chocolate dipping sauce : melt a handful bitter chocolate chips in double boiler, add a pinch of salt, cayenne pepper, mix, add 10 ml raspberry liqueur, mix and serve with croquettes
