  1. Prepare 3 large eggs mine are duck eggs
  2. Prepare 1 tbsp fish sauce

  5. Prepare Handful parsley roughly chopped
  6. Prepare Red chilli diced (depending on how hot you want it)
  7. Take 1 tbsp oil or fry oil / light
  8. Get Squeeze lime juice

  1. Chop the veggies.
  2. Crack the eggs, put in the soy sauce and fish sauce, whisk well.
  3. Using a large frying pan, heat on a medium to high heat add the oil and throw in the egg mixture. Add the chilli, onion and parsley.
  4. Once cooked almost through, using a spatula, roll it, slice in half and serve !
