Steps to make Mutter Rabdi Malai:
Making instant Rabri - Heat a pan add milk, once milk starts boiling, reduce the flame to low.
Boil the milk on low flame till it reduces to half then add sugar, milk powder and boil it.
At last add bread crumbs, cardamom powder and rose essence and boil till it reaches desired consistency. Now instant rabri is ready. Let it cool down and keep it in the fridge till its chilled cold
Making Stuffing - Take a grinder add peas and grind it into a coarse paste
In a kadai heat ghee, add grinded pea paste and cook this for 2-4 mins. Then add milk, sugar and milk powder and mix it, till it takes form of a dough.
Before switching off the gas add chopped dry fruits and mix it well.
Once the mixture cools down, take a small portion and make cylindrical shape.
Take bread slice, remove the edges and roll it with rolling pin to flatten, Now take bread slice, dip in the milk and squeeze it. And now place the pea stuffing on the bread, carefully roll the bread without breaking. Apply little milk to seal it if required.
Place the bread rolls in serving plate and pour the chilled rabri all over and garnish with cherry and Pista.
