The ingredients needed to make Mutter Samosa:
  1. Prepare 100 grams Mutter/peas
  2. Prepare 4 Potatoes
  3. Make ready 4 Green chillies
  4. Prepare 1/2 tsp Garam masala
  5. Prepare as per taste Salt
  6. Make ready 1 tbsp Fresh Coriander
  7. Prepare 1 tsp Fennel seeds/ Saunf
  8. Make ready 6 Mint leaves
  9. Make ready as required Oil for frying
  10. Take 250 grams Maida
  11. Take 1 tbsp Cornflour
  12. Get 1 tsp Ajwain/Jeera
  13. Make ready 1 tbsp Ghee
  14. Get 1 tsp Ginger garlic paste
  15. Take 1 Onion, optional
  16. Get 1 tsp Amchur powder
Steps to make Mutter Samosa:
  1. Heat a pan on the flame when heated then add water and bring it to a boil, then add peas, salt and pinch of sugar. After 2 mins turn off the flame and drain the water out from the peas and let it cool down on a cotton cloth and then cover it for some time, after that press it lightly with a rolling pin and crumble it, then transfer it to a pan. Mix the boiled potatoes salt, ginger and chilli paste, garam masala, saunf powder, salt coriander, mint leaves, peas and chopped onions.
  2. Mix it all very well then add amchur powder and take another pan to make a dough from maida, keep it aside for 10 minutes. Then make rotis out of the dough and semi cook it.
  3. Cut it into half and stuff the mixture in the roti and fold it like a samosa shape.
  4. Heat a pan, add oil and fry the Samos until it becomes crispy and it's colour turns into golden brown. Transfer it to a plate and serve it with sauce or green chilli chutney.
