  1. Make ready 200 grams Fresh Green Peas
  2. Prepare 2 Tablespoons Ginger-Garlic Paste
  3. Take 3 Medium sized Potatoes (chopped into cubes)
  4. Make ready 3 medium sized Tomatoes (finely chopped)
  5. Prepare 2 Medium sized Onions (finely chopped)
  6. Get 1 Teaspoon Mustard Seeds
  7. Prepare 1 Teaspoon Cumin Seeds
  8. Make ready 1 Pinch Asafoetida
  9. Prepare 3-4 Tablespoons Cooking Oil
  10. Take 1 Teaspoon Turmeric Powder
  11. Make ready 1 Teaspoon Red Chilli powder
  12. Make ready 2 Teaspoons Coriander powder
  13. Prepare 1 Teaspoon Garam Masala powder
  14. Prepare 1/4 Tablespoon Dried Fenugreek leaves (Roasted)

Instructions to make Dhabha style Aloo Mutter:
  1. Heat Cooking Oil in a pan. Fry Potato Cubes in Medium flame for 5 mins until a thin crust of brown is formed on Potato cubes. Now remove potatoes from the pan to keep it separate.
  2. Same pan now add mustard seeds and wait for it to splutter then put cumin seeds and an asafoetida powder. Now after ½ a minute,add up finely chopped onions for 10 mins in medium heat till they become light brown in colour.
  3. Add Turmeric Powder and give a quick mix. Now add up Ginger-Garlic paste to cook up at medium heat.
  4. Add fresh Coriander leaves, chopped tomatoes and cook on high heat for a minute and now to cook tomatoes covered on low heat add little salt for it becomes soft and mushy.vMix well and cook covered.
  5. Uncover the lid after 6 mins,mash it with back of a ladle,, add red chilli powder, coriander powder. Sauté the ingredients on medium heat. Adding little water to it shall prevent the masala from sticking to the bottom of the pan. And simultaneously keep alternating between stirring and mashing for 5 mins.
  6. Oil begins to ooze out from the masala so we can now add Green Peas along with pinch of sugar.(to retain colour and enhance the taste).
  7. Now add up the fried potatoes and mix gently making sure that it doesn't break potatoes due to aggressively stirring. - Now we add 1 ½ cup of water or as needed for consistency of the gravy needed in the dish and allowing the gravy to boil on medium heat.
  8. Now put salt, garam masala powder and coriander leaves,mix well now we lower the heat and cook it covered for 7-8 mins on reduced heat. Now add up dried roasted fenugreek leaves, Roast and then roughly crush between our palms.
  9. Giving a final stir and then we switch off the heat, shift aloo mutter in a serving bowl.
  10. Serve hot Aloo Mutter with Paratha or roti or even with steamed rice
