Prepare the flax eggs (1 Tablespoon ground flax to 2.5 water)
Cut the mushrooms and zucchini into into cubed size pieces.

Place the shredded potato's in large mixing bowl. Add herb, onion, zucchini and mushrooms. Mix well.
Add the flax egg, nut milk and flour. Mix well.
Heat up oil in pan. Once hot fry on each side well. About 10 minutes on each side. Medium high heat. It all really depends on size of fritter and thickness of batter. Watch carefully, please š³šš¼
