  1. Prep all ingredients
  2. Put coconut milk in a pan and bring to a boil. Add garlic, lemongrass and galangal and bring to a boil.
  3. Add chicken (do not stir! Press chicken down to submerge and add more liquid if required). Bring back to a boil, add baby corn, onion and tomato and stir roughly once chicken is no longer surface raw. Bring back to a boil once again.
  4. Add chillies, fish sauce, sugar (palm if possible) and kaffir lime leaves. Cook gently for 3 minutes.
  5. Turn off the heat and add the lime juice and sprinkle with chopped spring onion and cilantro.
