Prepare 1 Tbsp water (for gelatin)
Take 1/3 tsp rum
Get Jelly for Topping
Make ready 4 g (1 and 1/3 tsp) powdered gelatin
Make ready 2 Tbsp water (for gelatin)
Get 3.5 Tbsp water + 2/3 tsp lemon juice + 1.5 tsp granulated sugar
Get 3 Tbsp water + 1 Tbsp maple syrup
Steps to make Orange Mousse & Orange Jelly:

【Orange Mousse】Whip the heavy cream while cooling with ice water until it becomes heavy. Let it sit in a fridge. Soak gelatin in the water; set aside. Please put water first and sprinkle gelatin over to prevent unevenness.
Pour orange juice in a small bowl. Add granulated sugar to the orange juice and mix roughly. Microwave it at 600W for 30-40 sec and stir well to melt the sugar.
Melt the gelatin in the microwave little by little (600W, 5-10 sec each) so as not to boil. Add the melted gelatin to the orange juice. Stir well. Cool it in ice water to 25℃ / 77 F while stirring.
Transfer the orange juice mixture to a large bowl. Take the heavy cream out from the fridge. Add the heavy cream to the orange mixture in 4 parts, and stir well each time. If it becomes uneven, please stir with a whisk.
Pour the mousse mixture in each glass. Stir with bamboo skewers to flatten. Leave in a fridge for 1 hour to set.
【Orange Jelly】 Soak gelatin in the water; set aside. Add granulated sugar to the orange juice and mix roughly. Microwave it at 600W for 30-40 sec and stir well to melt the sugar.
Add rum and stir. Melt the gelatin in the microwave little by little (600W, 5 sec each) so as not to boil. Add the melted gelatin to the orange juice. Stir well. Let it cool to room temperature and pour in each glass.
Place a sheet of paper towel gently on the top of each glass and take off the sheet slowly to remove the scum. Leave in a fridge for 1 hour to set.
【For Topping】 Soak gelatin in the water; set aside. Put 3 Tbsp water and 1 Tbsp maple syrup in a container. Put 3.5 Tbsp water, 2/3 tsp lemon juice, and 1.5 tsp granulated sugar in another container.
Microwave the lemon mixture at 600W for 20-30 sec and stir well to melt the sugar. Stir well the maple syrup mixture too.
Melt the gelatin in the microwave little by little (600W, 5 sec each) so as not to boil. Put half into one mixture and the other half into the other mixture. Place a sheet of paper towel gently on the top and take off the sheet slowly to remove the scum. Leave in a fridge for 1 hour to set.
Stir the lemon jelly and maple jelly up with a fork to crush it. Top each glass with the crushed jelly. Done!
