The ingredients needed to make Gyudon:
  1. Take Stir-fry
  2. Make ready 1 lb beef sliced sukiyaki style
  3. Take 2 tbsp toasted sesame oil
  4. Prepare 12 oz onions sliced
  5. Make ready 1/4 cup sugar
  6. Take Soup
  7. Take 1/4 cup + 2tbsp soy sauce
  8. Get 1/4 cup + 2tbsp sake
  9. Get 1/4 cup + 2tbsp mirin
  10. Prepare 2 cups dashi
  11. Take Serving
  12. Take Rice
  13. Get Shichimi togarashi
  14. Prepare Beni shoga (pickled ginger)
Instructions to make Gyudon:
  1. Cut the onions in half lengthwise, from top to bottom (axis to axis). Cut each half into ¼-inch slices, also cutting lengthwise.
  2. Combine the soy sauce, sake, mirin, and dashi in a bowl, and set aside.
  3. Heat the sesame oil in a large skillet over high heat. Add the beef and cook, stirring frequently, for about 2 minutes, until the beef browns slightly.
  4. Add the sugar, and wait 10 seconds. Add the onion and cook, stirring constantly, for about 1 minute, until the onions begin to soften.
  5. Pour the liquid mixture into the skillet. Simmer for about 5 minutes, until the ingredients cook through.
  6. Use a large spoon to skim off any scum and fat that appear on the surface.
  7. While the ingredients are simmering, divide the rice among 4 large bowls.
  8. As soon as the gyudon is ready, spoon it over the rice, and serve immediately. Season with shichimi togarashi to taste and beni shoga
