  17. Get 8-10 fenugreek seeds
  18. Prepare Pinch hing or asafoetida
  19. Make ready 1 tbsp chopped ginger
  20. Get 2 green chilli finely chopped
  21. Get 2 dry red chilli broken
  22. Take 2 tbsp mustard oil
  23. Take to taste Salt
  24. Take 1 tbsp cumin seeds
Instructions to make Punjabi kadhi:
  1. Take a big bowl. Put yoghurt,salt,turmeric powder and besan or gram flour in it. Make a smooth mixture without any lumps. Keep aside.
  2. Mix all the ingredients for pakoras in a bowl and fry pakoras. Keep aside.
  3. In a big pan or kadhai put 2 tbsp oil. Now add cumin seeds and fenugreek seeds. Let them crackle.
  4. Now add onions and saute for 2-3 minutes.
  5. Now add green chilli and ginger. Saute. Add broken red chilies.
  6. Add curd mixture and mix properly.
  7. When the curry boils add salt. Cook for 15-20 minutes.
  8. When the curry thickens add pakoras. Stir well.
  9. Switch off the gas. Cover the pan. Let pakoras soak in it for some time.
  10. Temper with red chill powder mixed in hot ghee.
  11. Sprinkle some fresh coriander and serve hot with roti or rice. Tastes best with rice.
